Tasting Notes:

Highland Park 1989 @ 50% alc.vol (US 100% proof)
Smoky nose with some phenol. Palate is honeyed, silky and sherryish with some peatiness. An assertive finish with warming alcohol, late crisp oakiness and a tickle of smoke. Vivacious with a very slow, long flavour development. Gets up to speed at the very end. Fabulous.

Highland Park distillery was founded in the 1798 on a hillside overlooking Kirkwall, the capital of the Orkneys. Highly regarded, Highland Park today remains the only Orkney distillery in operation since the closure of Scapa. Until the recent opening of Blackwood distillery in the Shetland Islands, Highland Park was Scotland’s most northerly distillery. Barley is laid out on the V-shaped floors and turned on a regular basis to control the heat build-up. Water is sourced from springs below the distillery. Traditional floor maltings are used and the malt is dried in the kilns with a medium peating effect. A locally-cut shallow peat is obtained in April before being stacked and dried over the summer. This is then covered in heather adding a subtle nuance to the final flavour. Highland Park Distillery has 4 stills (2 pairs) and 12 washbacks.
