Lighter than other Islay. Less smoke and peat - a good introduction.
Nose is fragrant with peat, smoke and distinct floral notes.
Assertive palate. Hints of spice, peat and seaweed. Smoky,
salty and sweet . Well weighted with good flavour. Long,
dry peppery finish.

| Established 1846. Gaelic translation of Caol Ila is
‘Sound of Islay’ – pronounce as 'cull-eela'.
The Caol Ila distillery has a spectacular picturesque
location near Port Askaig on the north eastern shores
of Islay. It has magnificent views across the Sound
of Islay to the spectacular Paps of Jura. Caol Ila is
the largest distillery on Islay and operates with six
large and lantern shaped copper stills (three wash stills
and three spirit stills). Water is sourced at the distillery
from the peaty water running from Loch nam Ban (rich
in lime). The distillery takes its malt from the centralised
maltings at Port Ellen. Caol Ila is one of the lighter
Islay malts and highly regarded by blenders, (used in
Bell's, White Horse, Scottish Leader, Johnnie Walker
and Black Bottle). Pale golden colour provides a floral,
peaty nose and a warming, sweet flavour. Medium-bodied
malt with hints of coastal influences and iodine. Develops
a dry peppery finish. |
